Thirty cards with the numbers and rules a food handler test leans on: holding and cooking temperatures, cooling times, handwashing, sick-worker rules, the Big 9. Read the front, say the answer out loud, then flip.
Most backs cite the FDA Food Code 2022 section they come from. NEHA's PFH is built on that edition, and the 2026 edition left these numbers alone.
Run the deck twice. Then set it aside and pick a temperature from memory: 155°F is ground meat, 145°F is a steak, 165°F is the chicken and the reheat. The ones you miss are the ones to go back to on the internal cooking temperatures page and the temperature danger zone page.
Cards drill recall. Questions drill judgment, like which shelf the raw chicken goes on when the walk-in is full. Mix in the free food handler practice test and read the food handler study guide for the why behind each card.
About these cards
Can I print the deck?
Yes. Both sides of every card are in the page itself, so a browser print gives you fronts and backs. No sign-up needed.
Does the deck cover every topic?
It covers the numbers and rules that come up across topics: temperatures, times, hygiene, allergens, cleaning, pests. Receiving gets one card, shellstock tags; its study guide page has the rest.
